Hester van Hensbergen is a researcher and writer at TABLE, where she is currently focusing on ideas about naturalness in relation to human diets. Prior to joining TABLE, she organised the programme for the Oxford Real Farming Conference and worked as a chef and food writer. She is an intellectual historian by training, and completed her PhD, "Finite Earth Visionaries: Economics, Time and Environmental Crisis in the United States, c.1945–1980", in 2021.
